Thai Beef Noodle Soup (Kuay Teow Neua)

This month, Thomas is sharing his family recipe for Thai Beef Noodle Soup (“kuay teow neua”… or as the kids in our extended family call it “Monkey Ball Soup.”) This soup is traditional Thai street food, made in homes and sold from carts. Thomas’s mom is from Thailand and she brought this recipe with her when she emigrated to the US over 40 years ago. In our household, this delicious noodle soup has become a traditional Christmas morning breakfast. 

Some of the ingredients for this soup are available at the local grocers; for other items, however, an Asian market is your best bet. Ingredients for Thai Beef Noodle Soup (This is a “checkable” Shopping List to use on your phone)

  • 2 LBS BEEF BONES, BEEF SHANK, AND/OR OXTAIL
  • 10 CUPS OF WATER
  • 6 CUPS OF BEEF STOCK
  • 2 STALKS OF LEMON GRASS, SPLIT AND CUT 2 IN PIECES
  • 1 SMALL GALANGAL ROOT, SPLIT
  • 1 ONION, SPLIT
  • 2 HEADS OF PICKLED GARLIC
  • 2 TBSP PALM SUGAR
  • 2 LBS PACKAGE OF FRESH RICE NOODLES
  • 2 LBS PACKAGE OF FRESH RICE NOODLES
  • 1 CUP CILANTRO SPRIGS
  • 4 CUPS BEAN SPROUTS
  • For Spice Packet: 4 STAR ANISE, 2 CINNAMON STICKS, PEPPERCORNS, 1 TBSP CORIANDER SEEDS, SALT, DARK SOY SAUCE, AND FISH SAUCE, TO TASTE

Directions for Thai Beef Noodle Soup

  • In a small pan, gently toast the spice packet spices.
  • Meanwhile, heat a large stock pot with a glug of olive oil, place the bones/shank/oxtail with onion and galangal and fry until nicely browned.
  • Add water and beef stock.
  • Place spices in a muslin spice bag and add to the pot along with palm sugar, lemon grass, garlic, salt, soy sauce, and fish sauce. Bring to a boil, then let simmer for at least two hours.
  • When ready, remove pot from heat. Use a spoon to skim off the fat and impurities from the top of the soup. Return to heat at a low boil, adding the beef meat balls.
  • In another stock pot, boil a large pot of water.
  • Blanch noodles and bean sprouts using a blanching basket.
  • Place noodles in individual bowls, garnishing with celery, cilantro, prepared sliced steak and other items as desired (such as chiles in vinegar.)
  • Add broth and meatballs, season with more fish sauce and enjoy!
